We've been making bhujia in Bikaner since 1956. Three generations, one recipe, one factory outlet. Over the years, hundreds of customers have taken a moment to leave us a review on Google — 477 of them, to be exact, adding up to a 4.9 out of 5 star average.

We recently sat down and actually read through what people wrote, not just the stars they gave us. Here's what we found.

The headline number

We looked at all 477 reviews on our Google listing. Of those, 349 came with written feedback we could actually analyze for sentiment — the rest were star-only ratings with no comment attached.

Of the 349 with text: 87.7% were positive, 10.6% were neutral (mostly quick one-word notes like "good" or "nice"), and just 1.7% were negative. That's about as clean a report card as a business can hope for — and it's not just us saying so. It's what the words themselves say when you run them through sentiment analysis instead of only looking at the star count.

What people actually talk about

We pulled out the words that show up again and again across all 477 reviews, and the pattern was clear before we even finished counting:

best, bhujia, bhujiya, quality, taste, good, bikaner, parat, namkeen — in that order, roughly.

Two things stood out to us:

1. Parat bhujia is doing a lot of heavy lifting. It gets called out by name more than almost any other product we make. If there's one thing keeping the four-generation streak alive, it's that one.
2. "Quality" and "taste" beat everything else — not "price," not "packaging," not "variety." When customers describe us, they describe the product first. That's exactly how we'd want it.

The stories behind the stars

Numbers are nice, but some of the reviews told us things a star rating never could:

• A regular customer who's ordered the same bhujia every month for nine years, no matter which city his job has moved him to.
• A brother-in-law who carried 10 kg of bhujia to the USA because it was too good to leave behind.
• A customer who shipped 20 kg to a friend in Finland, twice.
• Visitors who came to Bikaner for the fort and the temple, and left talking more about the factory tour.

These are the reviews that don't show up in a percentage, but they're the ones that tell us the recipe is still doing its job.

What we're not proud of — and what we're doing about it

Out of the 477, six were genuinely critical, and almost all of them pointed at the same thing: what happens after the order leaves the shop, not what's inside the packet. A stale delivery here, a damaged box there, a slow response to a complaint once. Small in number, but real, and worth fixing.

In-person, at the factory outlet, the story is nearly unanimous — clean premises, fresh product, a team that's happy to walk visitors through the process. Online and shipped orders are where the experience gets less consistent. We're working on tightening that gap, because the bhujia that leaves our factory should arrive exactly as good as the bhujia you'd taste standing in our shop.

Most businesses look at their star rating and stop there. We wanted to know what was actually being said — the good, and the handful of things worth improving.
